Not to worry, here is a recipe for the most succulent pieces of deep fried Indian vegetarian kebabs which are made with hung curd and subtle flavor of fragrant spices. Unbelievably tender and delicious famously known as Dahi ke Kebabs.

Hey Foodies, Kebab is a very famous appetizer in India. There are tons of recipes for non veg kebabs but what about the vegetarian’s. Not to worry, here is a recipe for the most succulent pieces of deep fried Indian vegetarian kebabs which are made with hung curd and subtle flavor of fragrant spices. Unbelievably tender and delicious famously known as Dahi ke Kebabs.
INGREDIENTS:
- Yogurt / Dahi - 1 kg
- Cardamom Powder - 1/4 tsp
- Chopped Green Chili - 2 small
- Salt to season -
- Chopped Coriander - 1 tbsp
- Jeera Powder - 1/4 tsp roasted
- Garam Masala - 1/4 tsp
- Sattu Powder - 2 tbsp
- Oats Powder - 2 tbsp
- Powdered Sugar - 1 tbsp
- Grated Onion - 1 small
- Black Pepper - 1/4 tsp
- Grated Cheese - 1 cube
- Breadcrumbs - to coat
- oil - for deep frying
RECIPE STEPS:
For the Hung Dahi
- Place a strainer over a large bowl; place a muslin cloth over the strainer. Strain the dahi gently. Once done place the dahi along with the bowl and strainer in the refrigerator for 6 hours.
- After 6 hours, your hung dahi is ready. Squeeze out excess whey water if any.
For the Kebab
- Once done transfer the dahi in a large bowl add cardamom powder, green chili, salt, coriander, jeera powder, garam masala, sattu powder, oats powder, sugar, grated onion, black pepper and grated cheese.
- Using you hand or spoon stir well until all ingredients are combined. Add extra sattu and oats powder incase you find the mixture too sticky.
- Make small round dahi kebab using your palm, coat the kebab with some breadcrumbs. Continue the same steps for the remaining of the kebabs.
- In a deep frying pan, heat the oil on medium flame. Add the kebabs in batches. Deep fry them until they are golden brown. Follow the same procedure for the remaining kebabs. Remove on a kitchen towel.
- Serve hot Dahi Kebab with sliced onions and chutney of your choice.
RECIPE NOTES :
Notes: Do not throw the whey water as it is very nutritional. It can be used instead of water in other dishes such as – roti, gravies and kadhi. You can replace Sattu with besan. And using Oats powder is optional. You can coat the dahi kebab with maida, corn flakes or corn flour. You can also bake these dahi kebabs in a preheated oven at 250°C for 10 minutes.
