INGREDIENTS:
- Atta - 1 cup or ½ cup atta and ½ cup of oats flour
- salt - 1 tsp
- Eno - 1 sachet or 1 tsp or ½ tsp baking soda and ½ tsp lemon juice
- Water - as required to make the batter
- oil - as required to make the dosa
RECIPE STEPS:
- In a large mixing bowl combine atta, salt and eno. Give it a stir.
- Start adding little water at a time to make a thick batter at the beginning.
- Once all combined then start adding more water to make a lump free batter. The Batter has to be thin.
- Preheat a dosa tava over high heat, sprinkle water to lower the temperature of the tava and wipe the water with a cloth.
- Spread a good ladle full of the batter, spread it evenly and cook it over medium heat.
- Once the dosa batter starts to dry from top, drizzle some oil and cook for 2 minutes or until golden from the bottom.
- After 2 minutes, add masala potato filling or simply add onion, carrots and green chili.Flip it and continue to cook further. Atta Dosa is ready.
Serve
- Serve the healthy Atta Dosa hot at breakfast with some allam chutney, coconut chutney, gun powder and some sambar.
RECIPE NOTES :
Notes: Eno is used for instant fermentation and for making the batter crispy. Making the batter thick in the beginning and then thinning it down prevents lump formation. Bring the temperature down of the tava, will ensure that the dosa can stick to the tava really well. You can use ghee instead of oil. You can sprinkle some gun powder or some podi masala. If you cook over low flame then the dosa will be crispy and crunchy, if you cook over high flame then it would be soft. Medium flame is ideal for a perfect dosa.
